Kids Favorite Banana Muffins

Easy enough for the kids to make. Brown sugar on top is a must!

The original recipe is on a scrap piece of paper, but most likely was a KRAFT recipe. It used white sugar. My daughters prefer brown sugar, so that is how this change was made.

I will be posting GLUTEN FREE, SOY FREE, DAIRY FREE, EGG FREE versions of this recipe shortly.

I usually double this recipe as one batch is gone before they are cooled. Try making them in various sizes & add chocolate chips!

Ingredients

  • 3-4 mashed bananas
  • 1 cup Miracle Whip
  • 3/4 cup brown sugar
  • 2 tsp baking soda
  • 1 tsp vanilla
  • 2 cups flour

Instructions

  1. Pre-heat oven to 350 degrees F
  2. Line muffin tins with paper cups - 12 large or 24 mini
  3. Mash bananas and beat together with Miracle Whip and sugar
  4. Add baking soda and vanilla
  5. Add flour 1/4 cup at a time
  6. Fill muffin cups 3/4 full each
  7. Sprinkle brown sugar on tops for extra sweetness
  8. Bake for 20 - 25 minutes, or until toothpick comes out clean.
  9. Cool for 5 minutes and remove and cover to keep moist.
